Here I share with you my RAW & VEGAN caramel pecan brownie recipe. I promise you guys these are SO good!! And they’re RAW. What! Yes, it’s true! This has to be the one thing that I’ve received the most positive feedback on… these are ALWAYS a hit at potlucks, parties and wherever I bring them! They’re decadent, creamy and sweet enough to hit your sweet tooth – with natural sugar! What a healthy treat!
These are great to bring to a potluck or dinner party! I wish you guys will recreate this recipe as it is super easy and these raw treats are a must try!
Raw Vegan Caramel Pecan Brownies
For the Crust/Base
- 1 1/2 cup coconut flour
- 5 large soft dates
- 1/4 cup maple syrup
- 1/2 cup pecans OR almonds
- 1 tbsp cacao powder
For the Caramel
- 4 tbsp raw tahini
- 3 large soft dates
- 1/8 cup maple syrup
- pinch of sea salt
- dash of vanilla extract
Add brownie base ingredients to a food processor until chunky/doughy
Remove and place into a non-stick baking tray of choice. I added a sliver of parchment paper on the bottom for easy removal
Place in the freezer to firm up for about 30 minutes
Next, blend caramel ingredients together until creamy and smooth
Remove brownies from the freezer and place caramel on top of each brownie
Refrigerate for at least 2 hours to firm up and then it's ready to eat! ENJOY!
