Blueberry Chia Pudding… How refreshing does this look?! Vegan desert of the year I’d say! 😉 The best part about this recipe is that it is so easy and it basically makes itself, so for those who love a good cold sweet treat, and are stuck on a tight schedule, this is perfect for you!
Bring this to the beach with you as a snack to recharge after the dive, or on a hike to fuel the trek up the hill, wherever you are going this is perfect as it can fit in a mason jar, or container of choice therefore is easily transportable!

Blueberry Chia Pudding
For The Pudding
- 3 tbsp chia seeds
- 1/2 cup almond milk/plant milk of choice
- splash vanilla extract
For the Blueberry Jam
- 1/2 cup blueberries
- 2 tbsp maple syrup
- 1 tbsp chia seeds
Place the pudding ingredients in a jar and mix well until evenly combined
Place in refrigerator overnight, or at least 4 hours, for the chia seeds to absorb the milk to turn it into a pudding consistency
Add the blueberries & maple syrup to a blender and blend until smooth, fold in chia seeds & place in a jar and allow that to set in refrigerator overnight to thicken.
Once both ingredients have reached your desired consistency, assemble together. Top with your favourite fruits, some coconut flakes & enjoy!
