Lemon Pepper Tofu & Peanut Sauce

I think by now the whole world knows I love tofu. It is such a great addition to so many dishes! If you prepare it correctly, tofu can be turned into magic. I swear, it’s true! 😉

The weather is getting chillier outside, and that calls for more warming and hearty meals! Am I right? Onesies, fuzzy socks & a nice bowl of lemon pepper tofu with a delicious peanut sauce over veggies. Yeah, just perfect!

The tofu is cooked to perfection! Those who are signed up to my email list know the ultimate tofu hack to make it perfect every time and yep, I used it in this recipe!

When I was a kid, before discovering veganism, I really enjoyed lemon pepper chicken. Now that I have turned to the world of plant based eating, I have discovered lemon pepper tofu and there ain’t no goin’ back! No way! This is delicious and healthy! Not to mention that peanut sauce over top.. omg.

Lemon Pepper Tofu & Peanut Sauce

Ingredients

Lemon Pepper Tofu:

  • 1/2 block firm tofu
  • 1 lemon, juiced
  • black pepper to taste

Peanut Sauce

  • 1 tbsp peanut butter
  • 1-2 tbsp water, depending on desired consistency
  • 1/2 tsp rice vinegar optional
  • 1 thumb ginger, grated
  • 1/4 tsp garlic powder (or 1 garlic clove minced)

Instructions

  1. Drain and press tofu to get rid of excess liquid

  2. Cut into small cubes, coat in lemon juice & pepper ideally overnight, but 30 minutes will be enough

  3. Place on a lined pan with non-stick baking mat or parchment paper & bake in the oven at 400F for 30 minutes

  4. For the peanut sauce, combine all ingredients together in a bowl until creamy. You can also blend it up to remove the chunks but I prefer to have chunks.

  5. Assemble bowl with noodles, veggies, avocado, whatever you like... and ENJOY!
