Drain and press tofu to get rid of excess liquid
Cut into small cubes, coat in lemon juice & pepper ideally overnight, but 30 minutes will be enough
Place on a lined pan with non-stick baking mat or parchment paper & bake in the oven at 400F for 30 minutes
For the peanut sauce, combine all ingredients together in a bowl until creamy. You can also blend it up to remove the chunks but I prefer to have chunks.
Assemble bowl with noodles, veggies, avocado, whatever you like... and ENJOY!
