Lemon Pepper Tofu & Peanut Sauce

Lemon Pepper Tofu:

  • 1/2 block firm tofu
  • 1 lemon, juiced
  • black pepper to taste

Peanut Sauce

  • 1 tbsp peanut butter
  • 1-2 tbsp water, depending on desired consistency
  • 1/2 tsp rice vinegar optional
  • 1 thumb ginger, grated
  • 1/4 tsp garlic powder (or 1 garlic clove minced)


  1. Drain and press tofu to get rid of excess liquid

  2. Cut into small cubes, coat in lemon juice & pepper ideally overnight, but 30 minutes will be enough

  3. Place on a lined pan with non-stick baking mat or parchment paper & bake in the oven at 400F for 30 minutes

  4. For the peanut sauce, combine all ingredients together in a bowl until creamy. You can also blend it up to remove the chunks but I prefer to have chunks.

  5. Assemble bowl with noodles, veggies, avocado, whatever you like... and ENJOY!
