Blueberry Chia Pudding

For The Pudding

  • 3 tbsp chia seeds
  • 1/2 cup almond milk/plant milk of choice
  • splash vanilla extract

For the Blueberry Jam

  • 1/2 cup blueberries
  • 2 tbsp maple syrup
  • 1 tbsp chia seeds


  1. Place the pudding ingredients in a jar and mix well until evenly combined

  2. Place in refrigerator overnight, or at least 4 hours, for the chia seeds to absorb the milk to turn it into a pudding consistency

  3. Add the blueberries & maple syrup to a blender and blend until smooth, fold in chia seeds & place in a jar and allow that to set in refrigerator overnight to thicken.

  4. Once both ingredients have reached your desired consistency, assemble together. Top with your favourite fruits, some coconut flakes & enjoy!
